This year I tried out a new recipe for the holidays, Welsh cookies (also called Welsh cakes). The recipe was easy to put together, though the dough was very sticky even after chilling. I think it could have used a bit more flour. I first attempted to roll the dough out and cut circles using a cookie cutter, but it just didn’t work. I chilled it longer, but ended up pinching blobs of dough from the log (I thought maybe I could slice and bake…I couldn’t, too sticky!) and formed small discs. These cookies aren’t baked, but grilled. I used our electric griddle and I fit almost the entire batch, save one cookie, on at once.
The texture is more like a muffin than a pancake and the flavor is fabulous. The orange zest and currants stayed bright even days after I made them. They were highly addictive and this recipe is definitely a keeper.
