Christmas 2012 Baking

Christmas baking

This is somewhat delayed, but here’s the round-up of what I baked for Christmas.

1. Coffee Toffee from The Smitten Kitchen Cookbook by Deb Perelman

I got the Smitten Kitchen Cookbook for my birthday and wanted to make this recipe the minute I saw it. It’s fairly easy to make, you just need a good candy thermometer. Ours is digital which helped. I would definitely make this again, but I think I would increase the amount of espresso powder for more coffee punch!

2. Gooey Cinnamon Squares from The Smitten Kitchen Cookbook by Deb Perelman

Despite forgetting to set the timer and slightly over-baking these, I thought they were delicious almost coffee cake in flavor. Because of the over-baking, they weren’t quite gooey as promised, but I’m eager to try again.

3. Dark Chocolate Peanut Butter Chip Cookies from Evil Shenanigans

One of our favorite cookie recipes, Dave requested this one for Christmas. They’re soft on the inside, crispy on the outside and have great flavor. The recipe makes a lot, but they freeze and reheat well.

While this last recipe is not exactly a baked good, I made it for Christmas and it was pretty darn delicious: bacon-jalapeno cheese ball from the Homesick Texan. Simple to make and so tasty to eat. Highly recommend!
