Adapted from Frosted Bake Shop
Every since we first had the tomatillo and avocado salsa at Su Casa in South Haven, I’ve been wanting to recreate it at home. I found a few recipes, but gave this one from Frosted Bake Shop a try. I increased the amount of avocado and salt and added a little freshly ground black pepper. It’s great on chips, but it’s also fabulous on grilled chicken. I also like the idea of thinning it out with more tomatillos to make a salad dressing.
- 1 lb. tomatillos, cored and halved
- 1 jalapeno pepper, with or without seeds
- 1/3 cup cilantro, chopped
- 1 thick slice of onion, chopped
- 1 garlic clove, smashed
- 2 avocados
- 1 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Place all ingredients in a blender and blend until smooth. Makes around 3 1/2 cups of salsa. Store in the refrigerator, tightly covered. Enjoy!
