Now some people may have a hard time thinking about their vegetable garden after we got about 9″ of snow last week, but not me. One of my favorite daydreams is thinking about what I would plant if I had more property to work with.
First, I would plant several raspberry and blueberry bushes, a couple of apple trees (some sweet, some tart), strawberries, rhubarb, Honey Rock melons and maybe some watermelons and blackberries for Dave.
Then onto the vegetables: asparagus, brussel sprouts, broccoli, carrots, bell peppers, jalapeno peppers, poblano peppers, carrots, sweet potatoes, butternut squash, acorn squash, red potatoes, pickling cucumbers, green beans, zucchini, yellow squash, tomatoes, yellow onions, scallions, lettuce, spinach, tomatillos, garlic, eggplant, peas (for Dave), and corn.
As for herbs, I would plant sweet basil and cilantro, I don’t really use may other fresh herbs in my cooking other than these two. Is that weird? What other fresh herbs would you suggest? We use a lot of spices in our cooking, but not as many herbs. We do used dried oregano, but that’s it. I’m not a big parsley fan.
Did I miss anything? This big of a garden sure would keep us busy planting, weeding, harvesting and not to mention the blanching, freezing, canning, and pickling we would do, but it would be worth it!
