I first saw the whole mini pie baked in a canning jar on Not Martha, then I found this related blog post on Our Best Bites. So last fall, we canned a batch of apple pie filling specifically so I could try making these cute little treats.
I ended up using the pie crust recipe from Simply Recipes because I wanted a recipe that I could make in the food processor. I’ve never made pie crust from scratch so I wanted something really easy to do. I doubled the pie crust recipe to make a dozen mini pies, I only made a few with a top crust, the rest I made a strudel topping for (also from Our Best Bites). I would recommend NOT making two batches of pie dough at the same time in the food processor. I think I over mixed it a bit, we’ll find out when we taste them. I used 4.5 pints of apple pie filling.
We haven’t tried them yet, the jars are tucked away in our chest freezer in the basement for the time when we get a dessert attack and there’s nothing in the house!
