Virtual Cookie Party, Day 3

Day 3 wraps up our virtual cookie party with Pumpkin cookies from my exercise buddy, Lynette, pecan tarts from my Aunt Mary, and date snowballs, a favorite of mine.

Pumpkin Cookies
from Lynette

  • 1/2 cup butter
  • 1 1/2 cup sugar
  • 1 egg
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla
  • 2 1/2 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 cup chocolate chips, raisins, almonds or walnuts

Preheat the oven to 350 degrees F. Cream together the butter and sugar. Beat in egg, pumpkin, and vanilla. Mix dry ingredients and stir into wet ingredients. Stir in chocolate chips. Place drops of dough on cookie sheets and bake for 15 minutes.

Date Snowballs

  • 2 cups dates, chopped
  • 1 sticks butter, melted
  • 4 eggs, beaten
  • 1 1/2 cups walnuts, chopped
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 5 cups Rice Krispies
  • 1 small bag shredded coconut

Mix dates, butter, eggs, walnuts, and sugar in a saucepan and bring to a boil over medium heat. Boil for 6 minutes. Remove from heat, add vanilla and Rice Krispies. Mix thoroughly. Let cool enough to handle. Form into ½ inch balls with wet hands and roll in coconut. Store, covered in the refrigerator.

Pecan Tarts

  • 3 oz cream cheese
  • 1 stick + 1 tablespoon butter
  • 1 cup flour, sifted
  • 1 egg
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla
  • dash of salt
  • 2/3 pecans, chopped

Let cream cheese and stick of butter soften to room temperature; then cream and add sifted flour.  Chill one hour, then shape into 24 1” balls.  Place in greased mini muffin tins and shape dough to the bottoms and sides of the cups.

Beat egg, add cup brown sugar, butter, vanilla, salt, and pecans.  After beating, fill each muffin cup 3/4 full and bake at 350º for 25 minutes.  When cool, remove from pans and sprinkle with powdered sugar.  These freeze well.
